Origin Story

From the forests
of La Cuesta

The Ramón tree — Brosimum alicastrum — has been growing in the forests of Jalisco long before anyone thought to call it a superfood. For thousands of years, communities in the Sierra Madre knew what it was worth. They ground the seeds, they brewed them, they fed their families with the flour. We're not reinventing anything. We're just paying attention.

Our Capomo comes from La Cuesta, Jalisco — a small community in the Sierra Madre where the trees grow tall and the soil is still good. The farmers there work with the land, not against it. No monocultures, no shortcuts. The forest stays intact, and the seeds are better for it.

What ends up in your cup started as a seed in a canopy tree in the mountains of Jalisco. That's the whole chain. We think that's worth knowing.

The Science

Why Capomo works

"One tree. A seed, a flour, a leaf — each one doing something different. None of them needing caffeine to prove it."

☕ Coffee
01

Tryptophan-Rich

Ramón seed is unusually high in tryptophan, the amino acid your body uses to make serotonin. That's why people describe the feeling as focused but not wired — the kind of clarity that comes from being calm, not stimulated. Your nervous system will notice the difference.

☕ Coffee
02

No Jitters. More Focus.

There's no crash because there's nothing to come down from. People who've given up coffee for health reasons — adrenal fatigue, anxiety, pregnancy, just wanting to sleep again — find Capomo fits naturally into the ritual without the side effects. Kids can have it. So can your grandmother.

🌾 Flour
03

Complete Nutrition

Most gluten-free flours are just starch with good marketing. Capomo flour is different — it has real protein, calcium, iron, zinc, and vitamins A through E. You can bake with it, make tortillas, stir it into porridge. It behaves like flour and nourishes like food. That combination is rarer than it should be.

🌾 Flour
04

Prebiotic & Gut-Friendly

The fiber content is high enough to actually do something — steady blood sugar, a gut that works the way it's supposed to, no spike and drop after a meal. It's not a supplement dressed up as food. It's just food, doing what food used to do before we refined everything into oblivion.

🍃 Leaf Tea
05

Anti-inflammatory

The leaves of the Ramón tree have been used in traditional medicine in Mesoamerica for generations — for breathing, for digestion, for steadying the nerves. Modern analysis backs up what communities already knew. We harvest them by hand, dry them slowly, and keep the process simple. The result is a tea that actually tastes like it came from a forest.

Climate-Positive Crop

Brosimum alicastrum fixes nitrogen, builds soil, and pulls carbon out of the air while it grows. It's one of those rare crops where growing more of it is genuinely good for the land around it. We're not offsetting anything. The growing itself is the restoration.

Brewing Guide

Brew it like coffee

1

The Effortless Cup

Capomo is milled fine enough that hot water is all it needs. One heaped teaspoon, 6 oz of water just off the boil, stir. That's it. No machine, no fuss. The same way it's been made in Jalisco for a long time.

2

Drip or Pour-Over

Drop it into your regular drip machine or pour-over exactly as you would coffee — one tablespoon per 6 oz. The filter catches the solids and what comes through is clean, smooth, and has more aroma than most people expect the first time.

3

French Press

Steep for 4 minutes, press slowly. French press pulls out everything the seed has — the body, the earthiness, a faint natural sweetness at the finish. If you want to understand what Capomo actually tastes like, this is the method to start with.

4

Serve Your Way

Drink it black first, at least once — there's a depth to it that milk can soften too much before you've had a chance to notice it. After that, do what feels right. Oat milk works well. So does a little cinnamon or a small piece of piloncillo dissolved in.

One more thing worth knowing: because the grind is so fine, Capomo works in almost anything — moka pot, pour-over, cold brew (12–18 hours in the fridge, it's good). The method shapes the flavor, so it's worth experimenting. You're not going to ruin it.

Storage: Airtight container, out of the sun. Use within 3 months of opening for the best flavor — though if you're brewing it daily, it'll be gone long before that. No refrigeration needed.
